Spicy Chorizo Stuffing

A number of years ago my Dad requested that my Mom attempt to make a spicy stuffing using chorizo (always a family favorite for making chorizo and eggs when I was growing up).  Let's just say my Mom rose to the challenge. This stuffing is my absolute favorite part of our Thanksgiving (and even Christmas) dinners. It's always a hit at our holiday parties and once you try it you'll see why! 12 hamburger buns
1 lb pork chorizo (for spicier stuffing, use whole pound; for less spicy, use 1/2 pound)
1 c. chopped celery
1/2 c. minced onion
1 can chicken broth
1 stick butter
Sage, thyme, salt, and pepper

Step 1: Tear hamburger buns (or hot dog buns if you have them) into small pieces to make the bread crumbs. Throw crumbs in a large bowl and set aside.

Step 2: Spray skillet with cooking spray and brown chorizo.

Step 3: Remove chorizo from pan and set aside. Melt a stick of butter in pan and add the celery and onion. Brown for 5 minutes.

Step 4: Put chorizo back in pan and heat up.

Step 5: Dump the mixture into the bread crumbs and stir. Add about 1/3 c. of chicken broth to moisten. Add seasonings (sprinkled to taste) and stir again.

Step 6: Put in casserole dish and bake for 20-25 minutes at 350 degrees. Moisten with leftover chicken broth as needed.
